Charmoula is a fantastically herby marinade that works well with beef, pork, chicken and fish. Simply make up the marinade, place the meat fish or chicken in a non-reactive tray cover with the marinate and leave in the fridge for 30 mins to a couple of hours. Its originates from South America where their climate make it ideal for barbecuing, in fact this marinade will liven up any barbecue dish.

1 bunch fresh coriander
2 garlic cloves
1 green chilli
1 teaspoon sweet paprika
½ teaspoon ground cumin
½ teaspoon ground coriander
¼ teaspoon cayenne pepper
2 tablespoons lemon juice
2 tablespoons light olive oil


Place all the ingredients into a food processor and blend to a paste. Use immediately.
