Nina’s Mums Garam Massala

Garam Massalla is a blend of spices used in very nearly all Indian cuisine. Each region has a slightly different mixture, this one is from the Punjab. An old friend of mine gave me this recipe. There is enough here to make a years supply. Once you make this one once you will never revert to the shop bought stuff.

When making this invest in an electric coffee grinder otherwise you will be grinding away for hours, just dont use it for coffee afterwards. It will taste of cloves! The resultant powder will store for a couple of months if kept in an airtight container. To store for longer periods you can freeze the powder in sandwich bags.

Ingredients

Petes FoodIdeals - Ninas Mums Garam Massala1/2 lb Cumin Seeds
1/2 lb Corriander Seeds
1/8 lb Black Peppercorns
1/2 lb Cinnamon Sticks
1/4 lb Black Cardamon Pods
1/4 lb Cloves
1/8 lb Bay Leaves
5 Nutmegs

Preparation

Grind all the ingredients together. You may wish to invest in an electric coffee grinder for this but you will not be able to use it for anything else as the cloves will really flavor it. This spice can be added to most Indian dishes to give an authentic taste.
