Greek Salad

This is my take on the traditional Greek Salad. I like the idea of having a big chunky salad that does not have any lettuce in it, I think the colours from the cucumber and the tomatoes work well together. The saltiness of the feta combined with the sweetness of the tomatoes seem to work really well with grilled fish or meat!

Foodideals - Greek SaladIngredients
1/2 cucumber, deseeded, cut into chunks
3 tomatoes, cut into chunks (stem removed if you are my wife)
1 red onion, finely sliced
handful black olives, pitted
1 x 200g packet feta cheese, cut into half

Dressing
Olive oil
red wine vinegar
oregano
pepper

Method
Foodideals- Greek SaladPlace the cucumber, tomatoes, olives and red onion in a bowl and toss together. Crumble half of the feta and mix through the salad.

Mix the dressing ingredients together according to taste. I usually start with a cap full of red wine vinegar, a teaspoon of oregano and whisk in the olive oil and go from there. You should not need any additional salt. Dirzzle this over the salad and mix through thoroughly.

Place the remaining half of feta on the top of the salad, sprinkle a large pinch of oregano and serve immediately.
