Shepherds Salad

This zingy salad works well with all grilled food, but comes into its own when served with kebabs. Feel free to alter the quantities of the salad ingredients to suit your taste.


For the Salad

Foodideals - Shepherds Salad1 Crisp Lettuce
1/2 Cucumber
2 Red Onions
4 Large Ripe Tomatoes
2 sticks cellery
1/2 Avocado, peeled
Bunch Coriander

For the Dressing

Olive Oil
Juice 1/2 Lemon
Freshly ground salt and black pepper

Shepherds salad is incredibly easy to make. Simply chop all the salad ingredients except the coriander quite finely and put in a serving dish. Chop the coriander and add it to the salad gradually, tasting it as you go. Coriander has a very strong flavor and will overpower the salad if you are not careful.

I like to dress the salad at the last minute as this keeps it a little more crisp. This is achieved by drizzling over the olive oil and lemon juice again to taste, and adding the freshly ground salt and black pepper at the end. For a little extra zing you can sprinkle over a little cayenne pepper.

I like this salad with lamb koftaschicken shish kebabs and bacon wrapped lambs kidneys, but it goes well in jacket potatos too!
