Spicy Tomato Sauce

This sauce goes really well with any grilled food that you want to spice up allot. You can even have this sauce with pasta as a spicy midweek meal.


Foodideals - Spicy Tomato Sauce2 tins chopped tomatoes
2 red onions, finely chopped
2 cloves garlic, finely chopped
1 Scotch Bonnet chilli, finely chopped
4 teaspoons dried oregano
1 tablespoon tomato puree
pinch salt
pinch sugar
Light olive oil


To a heavy bottomed, lidded saucepan, add a little oil and heat to a medium heat. Add the onion and gently fry until translucent. This should take about 3-5 minutes. Add the garlic, chilli, oregano, and tomato puree. Fry for about 30 seconds then add the tomatoes. Fill the tins with cold water, add to the pan, add the sugar and salt. Bring the mixture to the boil, turn down the heat so it is just simmering and cook for about 30 minutes with the lid on, stirring once or twice. Remove the lid and continue to cook until the sauce has reduced down considerably. Check the seasoning and add more salt and pepper if necessary. Place in a non-reactive bowl, cover with Clingfilm and refrigerate until needed.
